skinny cream of broccoli soup

Skinny Cream of Broccoli Soup
1 bunch broccoli, separated into small florets & stems chopped
1 onion, chopped
1 leek, white & yellow parts only, chopped
2 cups potatoes, peeled & diced
2 cloves garlic, chopped
1 and 1/2 cups chicken stock or water
pinch dried thyme
1/4 tsp salt
1/4 tsp pepper
1 and 1/2 cups skim milk
In a large pot, combine broccoli, onion, leek, potatoes, garlic, stock or
water, thyme, salt and pepper. Bring to boil, turn to low heat, cover and
simmer
until potatoes are tender, approximately 10 minutes.

In a blender, puree soup in several batches until smooth. Return to pot, add
milk and heat. Do not bring back to boil. Serve immediately. Note: This
recipe
freezes well.
